Wild Irish Smoked Salmon- Saumon Sauvage Fume

Fresh in from the Atlantic Ocean the Wild Salmon is sustainably caught on the River Laune. The Salmon is caught by using the centuries-old practices of Draft netting, by local fishermen, just a few hundred metres from our smokehouse. After the tide is fished, the catch is brought straight to our smokehouse where they are expertly hand filleted and cured in Atlantic Sea salt. This is followed by gentle smoking using a secret medley of Oak Shavings and chips. The curing and smoking process takes up to sixteen hours resulting in a golden brown colour, buttery texture, rich in flavour that will melt in our mouth.
